Soft with a wonderful texture and flavour, these cookies are perfect for a Christmas cookie exchange. Delightful, decadent mint chocolate pudding cookies that the kids will ask for over and over again.

1 c sugar
1/2 c butter softened (1 stick)
1 egg
1/2 c sour cream
1 small box instant vanilla pudding mix 3.4 ounce
1/2 teaspoon salt
1/2 teaspoon baking soda
2 cups all-purpose flour
2 teaspoon mint extract
3 drops blue colouring + 10-15 drops green colouring
1 1/2 c chocolate chips
HOW TO MAKE MINT CHOCOLATE PUDDING COOKIES
Step 1: Add and cream the sugar and butter in a mixing bowl.
Step 2: Add in the egg, sour cream and pudding mix.
Step 3: Combine the flour, salt, and baking soda in a small bowl. Add this into the pudding mixture and mix until incorporated.
Step 4: Add in mint extract followed by the food colouring. Adjust to reach your desired colour.
Step 5: Fold in the chocolate chips.
Step 6: Onto the prepared cookie sheet, drop rounded tablespoons of the batter.
Step 7: Place inside the oven and bake for about 10 minutes at 375 degrees.
Step 8: Once done, remove from the oven and onto a cooling rack.
NOTES:
You can use a combination of 3/4 cup chocolate chunks, 3/4 cup regular chocolate chips, and half a cup of Andes baking bits. Or any varieties you preferred.
Andes mint adds wonderful flavor to the cookies but they sort of disappearing when mixed with the other ingredients. I would suggest to add them with 1 1/2 cups of chocolate chips. It works wonders!
