Mini Meatloaf Muffins

Prep Time: 10 mins | Cook Time: 25 mins | Total Time: 40 mins | Servings: 12

This is a fun way to serve meatloaf, and these babies will have the same mouthwatering and satisfying taste as the full-size ones. Tangy mini meatloaf muffins that you can serve with mashed potatoes or beans or slice for a grab and go sandwich lunch.

Ingredients

1 1/2 lb lean ground beef

2/3 c panko bread crumbs

1/2 c onion

1 tbsp barbecue sauce

1 tbsp mustard

1/2 tsp garlic powder

1 1/2 tsp chilli powder

1/2 tsp salt

1/2 tsp freshly ground black pepper

1 Egg, lightly beaten

Meatloaf sauce:

1/3 c light brown sugar

1/2 c ketchup

2 tsp dijon mustard

1/4 tsp ground nutmeg

How to make Mini Meatloaf Muffins

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: Add the ground beef, breadcrumbs, onion, a tbsp barbecue sauce, mustard, chilli powder, garlic powder, salt, pepper, and egg in a large mixing bowl. Mix using your hands or a large spoon.

Step 3: Among the 12 cups of a standard muffin tin, divide the mixture and press the mixture down.

Step 4: Place inside the preheated oven and bake for about 15 minutes.

Step 5: Meanwhile, mix the sauce ingredients in a small bowl.

Step 6: Once the meatloaf is done remove it from the oven and onto a paper towel to soak up excess grease.

Step 7: Spoon the sauce generously over each mini meatloaf.

Step 8: Place them back in the oven and bake for 10 to 15 minutes more or until the meat is cooked through.

Step 9: Serve the meatloaf with mashed potatoes and more sauce.
