Casserole:
5-6 c mashed potatoes, my homemade version is portioned for this recipe
1 c corn
1 c cheddar cheese, freshly grated
8 Chicken Tenders (I fancy my homemade recipe but frozen may be used)
Brown Gravy, you can also use a packet
How to make Mashed Potato Casserole with Crispy Chicken
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Set the frozen chicken tenders at room temperature for at least 5 minutes before slicing.
Step 3: In the bottom of a 9 x 13-inch casserole dish, spread the potatoes and top with corn and cheese. Note: Warm the cold mashed potatoes first.
Step 4: Slice the chicken strips carefully into pieces.
Step 5: And add the sliced chicken strips on top of the casserole.
Step 6: Place inside the preheated oven. If using frozen chicken tenders, bake for about 20 minutes, covered, or 15 minutes if using homemade chicken strips.
Step 7: Meanwhile, ready the gravy. Prepare on the stovetop.
Step 8: When the casserole is done baking, remove it from the oven and drizzle with gravy before serving. Enjoy!
