Ingredients
1 c. butter melted
1/2 c. unsweetened cocoa powder
2 c. all-purpose flour
2 c. granulated sugar
4 large Eggs
4 tsp vanilla extract
Chocolate Frosting:
1/4 c. butter softened
1/4 c. milk (I use 2%)
1/4 c. unsweetened cocoa powder
3 c. powdered sugar
How to make Lunch Lady Brownies
Step 1: Prepare the oven. Preheat it to 350 degrees F. With foil, line a 9 x 13-inch baking dish, and grease with non-stick spray. Set aside.
Step 2: Add the melted butter and cocoa powder to the bowl of an electric stand mixer. Blend using the paddle attachment until smooth.
Step 3: To the bowl, add in the flour and sugar. Beat until incorporated before adding in the eggs and vanilla. Mix until just combined and the batter is thick. Make sure not to over mix.
Step 4: Into the prepared dish, pour the batter and evenly spread. Place in the preheated oven and bake for about 25 to 30 minutes until a toothpick inserted in the middle of the brownie comes out clean. Take the brownies out of the oven when done and cool for at least 15 minutes before frosting.
Step 5: To make the Chocolate Frosting: Blend the frosting ingredients until smooth. Pour or spread the frosting over the warm brownies. Before cutting, let the frosting cool completely.
