There are many eggplant recipes I’ve seen so far. Although I have my favourites for a while now, it doesn’t hurt to include one more. Dressing eggplants has never been so fun with this incredible recipe. So easy to throw together with a few simple ingredients. This low-carb Eggplant Pizza turned out amazing as I expected. Ready in no more than twenty minutes, I am sure you’ll enjoy and love this recipe as much as I can.

1 large eggplant
1 tbsp olive oil
1/2-1 c. no sugar added pizza sauce
2 garlic cloves minced
1/2 yellow onion sliced
1 c. fresh baby spinach
sea salt to taste
ground pepper to taste
3/4 c. shredded mozzarella cheese
¼ c. chopped fresh oregano
crushed red pepper optional
How to make Low Carb Eggplant Pizza
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: To about 1/4 to 1/3-inches thick, slice the eggplant lengthwise. On both sides of the eggplant slices, brush or rub a bit of olive oil. On a baking sheet lined with parchment paper or a baking stone, lay the eggplant slices, then sprinkle them with salt and pepper. Bake in the preheated oven for about 7 to 10 minutes or until hot and the eggplants are beginning to cook down.
Step 3: In the meantime, heat half tbsp olive oil in a skillet. Once hot, add the garlic and onion and saute for about 3 to 4 minutes until soft. Season with salt and pepper, then add in the pizza sauce followed by spinach. Continue to cook for another minute or two until the warm and the spinach has wilted.
Step 4: After taking the eggplant slices out of the oven, top each slice with onion and spinach mixture, and sprinkle with cheese and chopped oregano. Resume baking for another 5 minutes or until the cheese has melted.
Step 5: Garnish with some more fresh oregano and crushed red pepper. Serve immediately. Enjoy!
NOTES:
Feel free to make your pizza sauce or use store-bought.
Want more protein? To the skillet, add in around 8-ounces of ground chicken sausage or veggie sauce with garlic and onion. Saute until completely cooked before adding in the pizza sauce and spinach.
