I love these lemon pound cake cookies. They are so cute and taste like a pound cake just in a cookie form! These cookies are fluffy with a huge fresh lemon flavor. These lemon pound cake cookies are one of my ultimate favorite pound cake recipes. Super easy to whip up and does not have any fancy ingredients to make. In no time, you’ll have these tasty cookies ready. Do not skip the tart lemon glaze because it makes a big difference! Simple and very similar to frosting. The glaze is lighter than Lofthouse cookies, but still pretty great! Surely, these lemon pound cake cookies are a real treat for all lemon lovers!

Cookie:
1 large egg
1-2 tsp lemon extract
1 half stick of softened butter
1 boxed lemon pound cake mix
Glaze:
1 tsp lemon extract
2-3 tbsp water or milk
1 tsp vanilla extract
1 c. powdered sugar
HOW TO MAKE LEMON POUND CAKE COOKIES
Step 1: Prepare the oven. Preheat it to 375 degrees F. Using parchment paper, line a baking pan.
Step 2: In a bowl, place the pound cake box mix, egg, and butter. Mix well for about 1 to 2 minutes.
Step 3: Into about 1-inch balls, roll the mixture and place them on the prepared baking sheet. Into powdered sugar, dip a small glass, and press this on a dough ball to flatten.
Step 4: For the glaze, place the powdered sugar, milk, and extracts in a small bowl. Mix well until combined, then sprinkle this over the cookies.
Step 5: Place the cookies in the preheated oven and bake for about 8 minutes.
Step 6: When done, take the cookies out of the oven and onto a wire rack to cool.
Tips:
1. Make sure not to completely flatten the cookies. Press them to just about 1/4 to 22-inch thickness.
2. If you do not want to glaze the cookies that is fine. You can skip it.
