NOODLES:
Cooking spray
1 (8 ounces) block cream cheese
3 large Eggs
2 cups shredded mozzarella
1/2 cup freshly grated Parmesan
Kosher salt
Freshly ground black pepper
FILLING:
1 tablespoon extra-virgin olive oil
1/2 medium yellow onion, chopped
3 cloves garlic, minced
1 tablespoon tomato paste
1 pound ground beef
Kosher salt
Freshly ground black pepper
3/4 cup marinara
1 teaspoon dried oregano
Pinch crushed red pepper flakes
1 (16 ounces) container ricotta
1 1/2 cups shredded mozzarella
1/2 cups freshly grated Parmesan
Freshly chopped parsley, for garnish
How to make Keto Lasagna
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: With parchment, line a large baking sheet and grease with cooking oil.
Step 3: Place the cream cheese, mozzarella, and Parmesan in a microwavable safe bowl. Melt in the microwave, then add in the eggs. Mix well until incorporated. And season with salt and pepper.
Step 4: Evenly spread the mixture into the prepared baking sheet. Place inside the preheated oven and bake for about 15 to 20 minutes o until golden. When done, remove from the oven and allow to cool.
Step 5: Heat oil in a large skillet over medium heat. Once the oil is hot, add the onion. Cook for about 5 minutes until tender. Add in the garlic and cook for another minute until aromatic. Add the tomato paste into the skillet with onion and garlic and mix well.
Step 6: Into the skillet, add the ground beef. Season with salt and pepper and cook for about 6 minutes, breaking the meat apart using a wooden spoon. Drain.
Step 7: Place the skillet on the stove. Add in the marinara and heat until warmed. Season with oregano, salt, pepper, and red pepper flakes.
Step 8: In half widthwise, cut the noodles. Then, cut the halves into 3 pieces.
Step 9: Into an 8-inch baking pan, spoon a little amount of sauce, and add 2 noodles in the bottom. Over the noodles, spread a third of the ricotta, layer with 1/3 meat mixture, then sprinkle with 1/3 shredded mozzarella. Make 2 more layers, then top everything with Parmesan.
Step 10: Place in the oven and bake for about 30 minutes until the cheese has melted and bubbly.
Step 11: When done, remove from the oven. Serve immediately, garnished with parsley.
