Ingredients
12 large Eggs
1/2 c. milk (I used skim milk)
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
3/4 c. shredded cheddar cheese divided
8 oz ham steak cubed
2 green onions sliced thin
How to make Ham and Cheese Egg Muffins
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: With cooking spray, generously grease a muffin tin and set aside. I would suggest that if a silicon muffin tin is available that you use that as it works best for this recipe.
Step 3: Whisk the eggs, milk, and spices in a large bowl.
Step 4: Add in half a cup of shredded cheddar cheese, ham, and green onions. Stir well.
Step 5: Fill the prepared muffin tins with the mixture and top each with the rest of the 1/4 cup cheese.
Step 6: Place inside the preheated oven and bake for about 25 to 30 minutes or until the eggs start to pull away from the sides of the muffin tins and the middle are set.
