I already have a few favourites that have proven themselves and I have been making constantly like this Grilled Cheese Zucchini. With only five main ingredients, you can easily throw this together in under twenty minutes. Maybe some of you are sceptical about this but trust me, you will love this amazing twist to your regular grilled cheese sandwich!

2 c. shredded cheddar
4 zucchini
2 jalapeños
Powdered garlic
12 slices bacon
Olive oil
Salt & pepper
How to make Grilled Cheese Zucchini
Step 1: After laying the zucchini flat, cut the top side off. To make a zucchini boat, dig out the interior.
Step 2: Cook the zucchini insides in a pan with minced jalapeños, garlic powder, olive oil, salt, and pepper.
Step 3: Stuff the zucchini boats with the mixture and top with the shredded cheddar.
Step 4: Roll with 3 slices of bacon on each zucchini lid. On a parchment-lined sheet pan, place the stuffed zucchini boats.
Step 5: Place in a preheated 350 degrees F and bake for about 20 minutes. With the bacon-wrapped lids, cover the zucchini boats and serve. Enjoy!
