Meatloaf:
1 medium-sized onion diced
2 cloves garlic minced
1 tbsp butter
2 lb ground beef
1 large Egg
1 c panko bread crumbs
1 c milk
1 tbsp Worcestershire sauce
1 tsp thyme
1 tsp kosher salt
Topping (see note):
1/2 c ketchup
1 tbsp brown sugar
1 tbsp spicy brown mustard
How to make Granny’s Classic Meatloaf
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: For easy clean-up, use parchment paper to line a baking sheet.
Step 3: In a saute pan, melt butter over medium heat.
Step 4: Saute the onions for about 3 to 5 minutes or until aromatic and a bit browned.
Step 5: Adjust the heat to low and stir in the garlic. Continue to cook for 2 to 3 minutes more. When done, remove from the heat and set aside.
Step 6: Combine the ground beef, egg, bread crumbs, milk, Worcestershire sauce, thyme,
salt, and cooked onions and garlic in a large bowl. Mix well using your hands but do not overwork the meat.
Step 7: Transfer the mixture to the prepared baking sheet and form into a loaf. Slice a crisscross pattern on top with a sharp knife.
Step 8: Place in the preheated oven and bake for about 40 minutes, uncovered.
Step 9: Meanwhile, mix the ketchup, mustard, and brown sugar in a bowl.
Step 10: When the baking time reached the 40th minute, spread the ketchup mixture over the meatloaf and bake for another 30 to 35 minutes or until the internal temperature reads 160 degrees F or 70 degrees C.
Notes :
Make sure to mix the meatloaf until just combined.
You can double the recipe for the ketchup topping if desired.
To have a crispy outer layer, try making the meatloaf flat. This also will reduce the baking time.
If available, use a meat thermometer to check the doneness.
