1/2 c unsalted butter
1 1/4 c light brown sugar, packed
1 loaf thick sliced bread about 2-inches thick, (1.4 pound or 650 grams loaf)
6 large Eggs
2 c milk (full fat or 2%)
2 tbsp pure vanilla extract
2 tsp ground cinnamon
1/2 tsp ground nutmeg
Icing sugar, to dust
Strawberries, blueberries, blackberries, kiwi fruits, pineapple, bananas, or any other fruit to serve
HOW TO MAKE FRENCH TOAST CASSEROLE
Step 1: Grease an oven-safe 9 x 13-inch or 22 cm x 33 cm baking dish lightly.
Step 2: In a small pot, melt the butter over low heat. Or place in a microwave-safe bowl and microwave in 15 seconds increments, stirring in between until the butter has melted.
Step 3: Add a cup of brown sugar into the melted butter and mix well to combine. If melting on the stove, after adding the sugar, simmer for a minute for the sugar to slightly dissolve. Then, pour over the prepared dish, spreading to evenly coat the dish.
Step 4: In a bowl, beat the eggs, milk, and vanilla and set aside.
Step 5: In a different bowl, combine the rest of the brown sugar, cinnamon, and nutmeg. Set aside.
Step 6: In a single layer arrange the bread over the butter and sugar mixture.
Step 7: Pour half of the egg wash on top and top with half of the brown sugar and cinnamon mixture.
Step 8: Add the rest of the slices of bread over and pour on top the rest of the egg wash and again top with the rest of the brown sugar and cinnamon mixture. And press the bread lightly into the egg wash.
Step 9: Use foil to tightly cover the dish and place in the fridge for at least 30 minutes or overnight.
Step 10: If you leave the dish in the fridge overnight, take it out 20 minutes before baking. And preheat the oven to 350 degrees F or 175 degrees C.
Step 11: Cover and bake for 30 minutes. Remove the cover and bake for 15 minutes more.
Step 12: Once done, remove from the oven and top with icing or powdered sugar, and serve with the syrup from the dish. Enjoy!
