French Onion Chicken Bake

I love French Onion Soup and this dish has the same good if not better. Easy and quick to make and the result is superb! With caramelized onions and a combination of two kinds of cheese plus the juicy chicken, you sure will skip a beat after having your first bite. A simple dinner that is perfect all year round and for the entire family!

Ingredients

4 Onions, peeled and sliced

4 tablespoons Butter

4 cloves Garlic, minced

1/2 teaspoon Pepper

1 teaspoon thyme

2/3 c. Low Sodium Beef Broth

2 tablespoons Balsamic Vinegar

4 Chicken Breasts, boneless skinless

1/2 teaspoon salt

1 c. Mozzarella Cheese, shredded

1/2 c. Parmesan Cheese, shredded

How to make French Onion Chicken Bake

Step 1: Prepare the oven. Preheat it to 400 degrees. And using cooking spray, grease a baking dish.

Step 2: To a large skillet, melt the butter over medium to high heat. Once the butter has melted, add the sliced onions and saute for about 5 minutes. Adjust the heat to medium, add in the garlic, pepper, and thyme, then continue cooking for a minute more. Pour in the beef broth followed by balsamic vinegar. Stir and cook for another 10 minutes until you have a jam-like consistency.

Step 3: Into the bottom of the prepared baking dish, place 1/3 of the caramelized onions. On top, add the chicken and season with salt. Then, add the rest of the onions over, top with the chicken, and sprinkle with mozzarella and Parmesan cheese.

Step 4: Place in the preheated oven and bake for about 30 minutes until the internal temperature of the chicken reached 165 degrees.

Step 5: When done, remove from the oven and serve warm. Enjoy!

Notes:

If using thick chicken breasts, slice them in half diagonally, making sure the pieces are the same size.

If desired, add in more spices.
