1 ½ pound boneless skinless chicken breast
½ c. all-purpose flour, for dredging
2 Eggs, beaten
⅔ c. breadcrumbs (home-made or store-bought)
½ c. finely grated Parmigiano-Reggiano cheese
salt and pepper
vegetable oil for frying
How to make Easy Parmesan Crusted Chicken
Step 1: Into about 1/4-inch thick strips, slice the chicken breasts. Sprinkle both sides of the slices with salt and pepper.
Step 2: Combine the breadcrumbs and Parmigiano-Reggiano cheese on a large plate.
Step 3: In the flour, dredge the chicken strips, shaking the excess off. Then, dip the strips into the egg mixture and coat with the breadcrumb-Parmesan mixture.
Step 4: In a little amount of vegetable oil, fry the chicken strips for about 2 to 3 minutes per side over medium heat until golden and completely cooked.
Step 5: If desired, garnish with some lemon wedges and chopped parsley before serving. Enjoy!
