Easy Ginger Loaf Cake

This is a lovely, moist cake topped with s simple lemon icing. A light ginger cake that you can whip up in a breeze using only simple ingredients. I am not a cake person. I prefer a loaf to the usual round cake. This, this light, spicy golden cake. Made with a mixture of cinnamon spices and ginger, this beautiful cake guarantees mild ginger flavor. And the lemon icing on top perfectly matches everything about this decadent cake.

Ingredients

1 Egg

225 grams of Plain Flour

1 tsp Ground Cinnamon

1/2 tsp Bicarbonate of Soda

2 tsp Ground Ginger

125 grams Butter

50 grams of Golden caster Sugar

250 grams of Golden Syrup

75 ml milk

75 grams of Icing Sugar

Grated zest of 1 lemon

4-5 tsp Lemon Juice

How to make an Easy Ginger Loaf Cake?

Step 1: Prepare the oven. Preheat it to 150 degrees C fan/300 degrees F/Gas 2.

Step 2: Grease a 2-pound tin and line. Alternately, you can use a loaf liner.

Step 3: In a bowl, place the flour, sugar, Bicarb of Soda, ginger, and cinnamon. Mix well.

Step 4: In a bowl over a pan of hot water, melt the butter with the golden syrup. Then, pour half of this into the flour mixture and stir well. Next, add the egg and beat it until blended. Pour in the rest of the butter, syrup mix and stir well. Lastly, stir in the milk until incorporated.

Step 5: Into the prepared loaf tin, pour the mixture. Place in the preheated oven and bake for about 60 minutes or until the center of the cake is set. Take the cake out of the oven once it is golden brown and firm to the touch. Transfer onto a cooling each to cool.

Step 6: Whisk the icing sugar and lemon juice until smooth. Then, pour this over the cooled cake, slightly spreading using a teaspoon. On top, sprinkle the grated lemon zest.
