Oven-roasted potatoes are a super great side dish that you can serve with just about anything! It is pretty easy and quick to throw together using only pantry ingredients. This easy and delicious roasted potatoes and onions is a classic favourite that people love all over the world!
These roasted potatoes and onions are chock-full of flavour with amazing texture and crispy edges. A great option if you are looking for another delicious addition to your weeknight meal. I doubt if there will be any leftovers, but if there are any, they are great to serve for breakfast, too.

Ingredients
2 lbs potatoes, sliced into 1/2” thick pieces
½ cup olive oil
½ cup canola oil
1 envelope onion soup mix
1 onion, halved and each half cut into quarters
4 cloves garlic
1 tablespoon freshly ground black pepper
1 tablespoon chopped fresh rosemary or more to taste
HOW TO MAKE EASY AND DELICIOUS ROASTED POTATOES AND ONIONS
Step 1: Ready the oven and preheat it to 450 degrees F or 225 degrees C.
Step 2: Add the onions and potatoes to a roasting pan. Drizzle with canola oil and toss to coat the potatoes and onions well. Next, add the rosemary, garlic, onion soup mix, and black pepper. Mix well.
Step 3: Using foil, cover the whole roasting pan. Put in the preheated oven and roast the potatoes and onions for approximately 25 minutes. Uncover and continue to roast for additional 30 minutes or until the potatoes are tender.
Step 4: When done, take the pan from the oven. Serve the roasted potatoes and onions right away. Enjoy!
Note:
Roast the potatoes for additional 10 minutes for a crispier texture.
