By far the best Mexican Casserole I’ve tried! Chicken, sour cream, cream of mushroom, cream of chicken, salsa, corn, cheese, and Doritos combined in one dish. One bite and you’ll get hooked! Super easy and quick to throw together, this crazy delicious casserole is ready in no time! This is perfect to serve a crowd, even your pickiest eaters will devour this.
Now, this is what I am talking about! All your favourite Mexican flavour with Doritos in one dish. I am obsessed! If you have not tried this, you are missing out big time!

Ingredients
3 c. cooked chicken chopped (I used a rotisserie chicken)
8 ounces sour cream
1 (10.75 ounces) can cream of mushroom soup
1 (10.75 ounces) can cream of chicken soup
1½ c. salsa or 1 (10 ounces) can diced tomatoes and green chiles
1 (11 ounces) can of corn, drained
2 c. Mexican cheese shredded
1 bag of nacho cheese Doritos
HOW TO MAKE DORITOS CHEESY CHICKEN CASSEROLE
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Using cooking spray, lightly grease a 9 x 13-inch pan.
Step 3: To the bottom of the prepared dish, place the crushed entire bag of Doritos.
Step 4: Set aside a cup of cheese. Mix the rest in a large bowl with the remaining ingredients. Pour this over the Doritos.
Step 5: Place inside the preheated oven and bake for about 20 minutes, uncovered.
Step 6: Evenly sprinkle the reserved cheese on top of the casserole and continue to bake for another 5 minutes until melted.
Note:
You can use your preferred store-bought salsas. Mine are Mateos, Kylitos, Pace Picante Sauce, and Pace Restaurant Style Salsa.
