Creamy Chicken Mushroom

PREP TIME: 10 MINS | COOK TIME: 20 MINS | TOTAL TIME: 30 MINS | SERVINGS: 6

Enjoy an impressive, restaurant-quality meal at home with this creamy chicken mushroom. This is a delicious one-skillet dinner that you can easily whip up in thirty minutes. A low-carb dish that I am pretty sure your family will love!

INGREDIENTS

Searing:

2 tablespoons olive oil

8 ounces cremini mushrooms, sliced

6 pieces chicken thighs, skinless and boneless

Creamy Sauce:

1 teaspoon minced garlic

4 tablespoons unsalted butter

1/2 teaspoon garlic powder

1 c. heavy cream or heavy whipping cream

1/2 c. chicken broth

1 c. spinach

3/4 c. shredded Parmesan or 1/2 cup grated/finely shredded Parmesan

1 tablespoon flour or cornstarch (optional) if you want a thick creamy sauce

salt and pepper to taste

How to make Creamy Chicken Mushroom

Step 1: Heat the olive oil in a skillet or pan. Add the chicken thighs to the hot oil and fry for about 4 to 5 minutes per side over medium heat until golden brown on both sides. Set the chicken aside when done. If desired, lightly sprinkle the chicken with salt and pepper.

Step 2: Add the cremini mushrooms to the same pan and cook until a little soft. Set the mushroom aside when done.

Step 3: Melt the butter in the same pan. Once the butter has melted, add the minced garlic to the pan and saute until soft. Then, add the heavy cream, chicken broth, garlic, and Parmesan cheese. Season with salt and pepper according to taste. Let it simmer for about 2 minutes or until the sauce has thickened and creamy. You stir in a mixture of 1 tbsp of each flour and water to thicken the sauce.

Step 4: Return the chicken and mushrooms to the skillet, then simmer for about 5 to 10 minutes. Add the spinach and stir

Step 5: Remove from heat and serve right away with your preferred rice or pasta. Enjoy!

NOTES:

Swap the chicken thighs with chicken breast.

For this recipe, you can also use a button or canned mushrooms.

Add 1 to 2 tbsp flour if using half-and-half. This will help thicken the sauce.

If you don’t have garlic powder, you can simply double the amount of minced garlic or vice versa.

If using unsalted butter, adjust the salt accordingly.
