If you know me well, you’ll know how much I love Taco Bell! I know by heart their menu and tried all that is there. I even tried recreating my fave Taco Bell’s meal and am proud to say I nailed some of them. But this recipe for copycat Taco Bell Quesadilla recipe came from a friend. It’s incredibly easy, and a breeze to throw together, and tastes just like the real thing!

Taco Bell Quesadilla Sauce:
1/4 c. Mayo
2 teaspoons Minced Pickled Jalapenos
2 teaspoons Pickled Jalapeno Juice
2/3 teaspoon Sugar
1/2 teaspoon Cumin
1/2 teaspoon Paprika
1/8 teaspoon Cayenne Pepper
1/8 teaspoon Garlic Powder
1 Dash Salt
Taco Bell Quesadilla:
1 Chicken Breast
1 c. Cheddar & Monterey Jack Cheese (or buy separately and use 1/2 c. of each)
1 Slice American Cheese
2 Flour Tortillas (Burrito size)
To Make the Taco Bell Quesadilla Sauce:
Step 1: To a small bowl, add the sauce ingredients (mayo, pickled jalapenos, pickled jalapeno juice, sugar, cumin, paprika, cayenne pepper, garlic powder, and salt). Mix well and set aside.
To Make the Taco Bell Quesadilla:
Step 2: Season both sides of the chicken breast with salt and pepper.
Step 3: In a skillet, heat 1 1/2 tablespoons of vegetable oil over medium-high heat. Add the chicken breast to the hot oil and cook until the internal temperature reads 165 degrees F. When done, remove from the skillet and slice thinly.
Step 4: On a hot skillet, place the tortilla. Add 1/4 cup of the shredded cheese and a half slice of American cheese on one side of the tortilla, then top with half of the chicken. On one side, spread around 1 1/5 tbsp of the sauce. Finally, fold the tortilla over, pressing gently using a spatula. Cook the tortilla for about 2 to 4 minutes per side until the cheese has melted and bubbly.
Step 5: Before serving, slice each tortilla into 4 pieces using a pizza cutter. Enjoy!
