Chicken, Zucchini and Fresh Corn Burgers

Prep Time: 40 mins | Cooking Time: 15 mins | Total Time: 55 mins | Yield: 4 Servings

A very luscious meal to serve pretty much any time of the day! Give this one a try now!

Ingredients:

Greek yoghurt sauce:

1 c Greek yoghurt

2 tsp grated lemon zest

2 tbsp fresh lemon juice

2 garlic cloves minced

1 tbsp olive oil

½ tsp salt

Burgers:

1 pound ground chicken

1 medium zucchini coarsely chopped

1 ear fresh corn husks and silk removed and kernels cut from the cob

½ medium red bell pepper finely diced

3 green onions thinly sliced

1 large egg lightly beaten

½ c panko bread crumbs

2 tbsp chopped cilantro

3 garlic cloves minced

1 tsp ground cumin

1 tsp ground coriander

1 tsp salt

½ tsp freshly ground black pepper about 3-4 tbsp olive oil for searing

Tomato-Cucumber Relish:

1-pint cherry or grape tomatoes quartered

⅓ medium seedless English cucumber finely diced

2 green onions finely sliced

¼ c finely chopped fresh cilantro

1 clove garlic minced

zest of 1 lemon

2 tbsp fresh lemon juice

Pinch of salt

How to make Chicken, Zucchini and Fresh Corn Burgers

Step 1: In a small mixing bowl, add in all the ingredients for the Greek Yogurt. Stir until well mixed.

Step 2: Place the bowl inside the fridge to chill until ready to use.

Step 3: Prepare the oven and preheat 425 degrees F.

Step 4: In a large mixing bowl, add in all the ingredients for the burger except the oil. Use your hands to mix until well combined, and then make them into patty sizes.

Step 5: Place a large frying pan on the stove and turn the heat to medium.

Step 6: Add in oil and make sure to cover the bottom of the pan, and then allow the oil to become hot.

Step 7: Add in the burgers and sear each side for 2 minutes or until the colour turns golden brown.

Step 8: Place the seared burgers on a baking sheet.

Step 9: Place the baking sheet inside the preheated oven and bake for 7 to 10 minutes or until done.

Step 10: Meanwhile, combine all the ingredients for the tomato-cucumber relish. Stir until well mixed.

Step 11: Remove the burgers from the oven.

Step 12: Serve the burgers with the relish. Enjoy!

Instructions

Step 3: Prepare the oven and preheat 425 degrees F.

Step 11: Remove the burgers from the oven.

Step 12: Serve the burgers with the relish. Enjoy!
