I have so many marinade recipes I’ve tried in the past years! Most of them turned out amazing. I have my favorites, and this Chicken Thigh Marinade is on the top of my long list! It has a savoury blend of fresh herbs, garlic, olive oil, lemon, and seasonings. The secret is to marinate the chicken for at least an hour, so the flavours soak into them. I prefer to marinade mine for up to 24 hours. When ready to cook the chicken, remove them from the marinade and cook as desired. This simple marinade can be used if you are planning to roast, broil, or bake your chicken thighs. This marinade guarantee that your chicken comes out amazingly perfect every time!

INGREDIENTS
1/2 c. olive oil
1 tbsp fresh parsley leaves chopped, plus more for garnish
1 tbsp fresh thyme leaves chopped
3 tbsp soy sauce
2 tbsp brown sugar
1 1/2 tsp lemon zest
2 tsp minced garlic
1 tsp salt
1/2 tsp pepper
How to make Chicken Thigh Marinade
Step 1: In a large bowl, place all the ingredients (olive oil, fresh chopped parsley, thyme, soy sauce. Brown sugar, lemon zest, garlic, salt, and pepper). Mix well until combined.
Step 2: To the bowl, add two pounds of chicken thighs. On top of the chicken, spoon the marinade. Tent the chicken and keep it in the fridge for at least an hour or up to 24 hours.
Step 3: When ready to cook, take the chicken out of the marinade. Continue to cook the chicken as desired.
