My meal will never be complete without sides. I have a rather long list of my favourite and go-to side dish recipes, and this cheesy hashbrown potato casserole recipe is on top of my list. It is one of the best and most versatile side dishes that pair well with just about anything and is perfect to serve for breakfast, lunch, or dinner.
This casserole captures my heart the first time I made this for good reasons. Apart from this casserole tasting great, this is also pretty versatile, incredibly easy, and quick to throw together. This is one of my fave way to cook potatoes, and this recipe does not disappoint. This casserole balances out all the exciting flavours – creamy, cheesy, slightly tang, and rich with melt-in-your-mouth goodness that is to die for!

Ingredients
1/4 c. Butter, melted
32 ounces bag Frozen Hash Browns, thawed (cubed or shredded)
1 small Onion, finely chopped
2 c. Shredded Cheddar Cheese, divided
2 c. Sour Cream, (16 oz.)
1 tsp Salt
1/4 tsp Black Pepper
1 can Cream Of Chicken Soup, cream of mushroom soup, cheese soup, or potato soup
How to make Cheesy Hashbrown Potato Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees F. Ready a 13 x 9-inch pan. Lightly grease and set aside.
Step 2: Place the potatoes, sour cream, onion, cream soup, 1 ½ cups cheese, butter, salt, and pepper in a large bowl. Mix well until everything is blended. If needed, season with more salt and pepper.
Step 3: Into the prepared pan, spread the mixture. Place in the preheated oven and bake for about 45 minutes, uncovered.
Step 4: Remove the pan from the oven and top the casserole with the rest of the half cup cheese. Return the pan to the oven and continue to bake for another 10 minutes or until bubbly and golden.
Step 5: Remove from the oven when done and serve. Enjoy!
