This Broccoli Cornbread Casserole has been one of my top picks for entertaining. It’s a breeze to make with just a few simple ingredients and it’s super delicious! This casserole is fabulous as is but you can easily make this in a complete meal by simply adding in some browned ground beef or chicken.

I have not tried adding in some mushrooms or yellow and red bell peppers but they say it’s amazing as well! For the cheese, you can pick from Colby, jack, or cheddar cheese or a blend of both. 1 box jiffy cornbread mix
1 stick butter or margarine (divided in 1/2)
1 cup chopped onion
2 cups shredded cheddar cheese
1/3 cup milk
4 Eggs, slightly beaten
1 (10 ounces) pkg chopped frozen broccoli
How to make Broccoli Cornbread Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: In a 9 x 13-inc baking dish, add a half stick of butter and melt in the preheated oven.
Step 3: In a pan, melt the remaining half stick of butter, you can even microwave it, then mix it in with the rest of the ingredients. Into the baking dish, pour in the mixture. Place in the preheated oven and bake for about 30 to 35 minutes until the top is golden brown.
