Mouthwatering smothered Wet Burritos filled with ground beef and refried bean and smothered with red sauce topped with gooey cheese. This is the best burrito I’ve had in years!

1 pound ground beef
1/2 c. chopped onion
2 teaspoons minced garlic
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon pepper
4.5 ounces diced green chile peppers
16 ounces refried beans
8 ounces tomato sauce
10 ounces enchilada sauce
15 ounces chilli no-beans (Hormel)
6 flour burrito tortillas (about 12”)
2 c. shredded lettuce
3 c. shredded Mexican blend cheese
Chopped green onions (for garnish)
Any additional desired toppings
How to Make the Best Ever Smothered Wet Burritos
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: In a skillet, cook the ground beef and onion over medium-high heat until the beef is evenly brown and the onions start to soften. When done, drain the grease, then season the beef and onion with garlic, cumin, salt, and pepper. Ad in the green chillies and refried beans and stir until incorporated. Turn the heat off but make sure to keep the beef mixture warm.
Step 3: Place the tomato sauce, no-bean chilli, and enchilada sauce in a saucepan. Whisk until everything is incorporated and cook over medium heat until heated through. When done, turn the heat off and keep the sauce warm.
Step 4: Into 6 portions in the pan, divide the beef and bean mixture. On a plate, place a burrito-sized tortilla and add in the centre about 1/6 of the ground beef, top with a bit of cheese and lettuce. Skip the lettuce if you don’t want it baked inside or swap with other veggies if desired.
Step 5: Start folding in the left and right sides of the tortilla over the filling, holding it in place with your fingers. Fold in the top and bottom sides, overlapping so the filling stays intact. Do this until you have made 6 tortillas. When done, place the burritos in two greased 9 x 13-inch oven-safe dishes seam-side-down. Over the burritos, pour the sauce and sprinkle evenly with the rest of the cheese.
Step 6: Place in the preheated oven and bake for about 15 to 20 minutes until the burritos are heated through and the cheese has melted.
Step 7: Remove from the oven when done and top with extra lettuce, tomato, sour cream, and dried chives, or your desired toppings. Serve and enjoy!
Note:
Freeze any leftovers and when ready to serve, thaw completely and heat for about 15 to 20 minutes at a 400 degrees F oven until heated through.
