12 oz. egg noodles uncooked
2 tsp olive oil
1 1/4 pounds lean ground beef I use 90% lean
1 onion finely chopped
2 tsp minced garlic
salt and pepper to taste
16 oz. canned tomato sauce
15 oz. can diced tomatoes drained, I prefer the small diced (petite cut) variety
2 tsp Italian seasoning
2 c. shredded cheddar cheese
2 tbsp chopped parsley
cooking spray
How to make Beef Noodle Casserole
Step 1: Following the package directions, cook the egg noodles in a large pot of salted boiling water.
Step 2: Prepare the oven. Preheat it to 400 degrees F.
Step 3: In the meantime, in a large pan, heat the olive oil over medium-high heat. Once the oil is hot, add the ground beef and cook for about 4 to 5 minutes, breaking the meat as it cooks using a spatula.
Step 4: To the pan, add the onion and garlic. Continue to cook for 5 minutes more or until the onion has softened and the beef is completely cooked. To taste, season with salt and pepper.
Step 5: To the beef, stir in the tomato sauce, tomatoes, and Italian seasoning until well combined.
Step 6: After the noodles are done, drain and add to the pan. Toss to combine with the beef and other ingredients. Then, into a greased 9 x 13-inch baking pan, pour the beef and noodle mixture and top with cheddar cheese.
Step 7: Place in the preheated oven and bake for about 10 to 15 minutes until the cheese has melted. Remove from the oven when done, and serve garnished with parsley. Enjoy!
